Gluten-free + Dairy-free Boterkoek (Dutch Butter Cake)
We're already at the end of October, which means it's time for Pursuer's first virtual book club gathering!
This month's book is "The Hiding Place" by Corrie Ten Boom. This memoir begins in Haarlem, Holland, so I was inspired to create my own version of a famous Dutch desert for this month's club gathering--Boterkoek (butter cake).
This butter cake is definitely my own version because it is gluten-free, dairy-free, and does not use refined sugar.
It also doesn't have any actual butter.
So maybe it's just cake? Lol
To get most of these gluten-free + dairy-free ingredients, I went to Healthy Options, where I recently became a member!
I was so excited to go to the store, as these ingredients are not something you can easily find in your average grocery store in the Philippines.
If you're looking for a desert that is super easy to whip up, this is it!
All you need to do is measure out your ingredients, mix them together, and pop the cake in the oven! You can have this cake made with less than an hour of your time.
The most strenuous part of the preparation is whisking the eggs, but that's because I did it by hand since I don't have a mixer.
Other than that, it's a breeze!

When the cake was done, I let it cool for about 30 minutes and then I dug in :)
Almond flavoring is my absolute favorite in baked goods, so I thought it was lovely.
When my husband tried it, he appreciated the moist texture of the cake. The almond flavoring was something new for him, as it's not a usual flavor here in the Philippines!
